Peanut Oil
Peanut oil, also known as arachis oil, is a light, mildly sweet vegetable oil derived from peanuts. With its strong peanut flavor and aroma, this oil is preferred for both general kitchen use and adding extra flavor as roasted oil. Unrefined peanut oil has a smoke point of 320°F/160°C, similar to sesame oil, and is used to enhance the flavor of dishes. Refined peanut oil has a smoke point of 450°F/232°C and is typically used for frying voluminous foods like French fries.
Clear, cold-pressed oil from peanuts, valued especially for frying due to its high smoke point, as well as being used for salads. Peanut oil contains approximately 50% monounsaturated and 30% polyunsaturated fatty acids. When stored in a cool, dark place, it can be preserved indefinitely.

Among the main constituent fatty acids are oleic acid (as olein, 46.8%), linoleic acid (as linolein, 33.4%), and palmitic acid (as palmitin, 10.0%). The oil also contains stearic acid, arachidic acid, behenic acid, lignoceric acid, and other fatty acids.
